One of the delicacies of Hiroshima is the Hiroshima pancake, otherwise known as an okonomiyaki. We were just wandering around the foodcourt level of a Hiroshima department store and found a restaurant specializing in the pancake. Of course we went in to try one! Sitting at the counter is preferred over a table since you get to see the chefs in action. They first create a thin pancake, cover it with a thick pile of cabbage, bean shoots, bacon, then flip it over. During this time, a circle of soba noodles is cooking next to it. The pancake is flipped again, the noodles placed on top, then a cooked egg is placed above it. Generously slather on some okonomiyaki sauce and other flavourings and yer done. Dinner and entertainment all in one.

my FAVOURITE japanese foodstuff! they're so moorish but so yummmmmy..

the soba noodles and egg are news to me.. they don't have epic pancakes here like that :( but those look SPECTACULAR.
